You could use a 32bit kernel on those chips, but doing so is pretty 
pointless since PAE tops out at 64GB. Additionally 32 bit processes top 
out at 4GB which probably negates the reason for having 128GB of RAM 
though I have no idea what your application is doing.

I've been running 64 bit on servers for three years and have had very 
little issues getting Mysql, Apache, PHP, Python, Samba, Bind, etc 
installed and working correctly.
